Grass-Fed Traditions currently supplies 100% grass-fed beef from small-scale family farms in Wisconsin. Our cows are all grass-fed Angus and Galloway (mostly Galloway). How do we define "grass-fed?" The cows are on pasture, not in feed lots eating silage. They are also finished on grass, and do not eat grains at all. We don't process animals in the winter or early spring, when they are only eating dry grass. Our animals are eating green grass right up to the time of processing, and are dry aged before packaging.
The CLA Advantage
Conjugated Linoleic Acid (CLA) is a naturally occurring free fatty acid found mainly in meat and dairy products in small amounts. CLA was discovered by accident in 1978 by Michael W. Pariza at the University of Wisconsin while looking for mutagen formations in meat during cooking. The most abundant source of natural CLA is the meat and dairy products of grass-fed animals. Research conducted since 1999 shows that grazing animals have from 3-5 times more CLA than animals fattened on grain in a feedlot. The source of Omega 3 is the green leaves of plants. When cattle eat their natural diet, beef becomes a great source of Omega 3. Grain is not a rich source of Omega 3, so standard, cattle-finishing practices cause the Omega 3 level to decrease dramatically.

Our microwave pork rinds are produced in North Carolina. The best way to learn how to cook them is to put 1/4 cup on a paper plate or paper towel and set the microwave for 2 minutes on high. 1/4 cup of microwave pork rinds will make approximately 2 cups of puffed pork rinds when cooked. Watch them cook thru the window and stop the microwave when they quite puffing. This will be the optimum cooking time for your unit. Let them cool for 30 seconds to increase the crunchy texture before eating. Microwave Pork Rinds are safe to store at room temperature (do not refrigerate or freeze) and remain favorable for 9 months.

Chef Piggy Tail says curl your tail with our cinnamon sugar seasoned pork puffies. 1/4 cup of microwave pork rinds will make approximately 2 cups when puffed in your microwave. A snack food with less fat, less carbs, less calories and more natural protein than many other snacks such as potato chips and microwave popcorn. Our seasoning is made in our kitchen from all natural ingredients, no MSG, no preservatives and is gluten free. Our serving size is 0.5 ounce (about 1/8 cup or one small handful). Put the pork rind pellets onto a microwave approved paper plate. Spread the pellets so they won't stack up on top of each other. Consider your first batch to be a test batch. This is because microwave ovens cook at different rates. Start with a time of a minute and a half. If some of the pellets don't puff up all the way, or if a few burn, adjust the time up or down by ten or fifteen seconds. They don't make any noise as they puff up. At this point you can add seasoning to the pork rinds. When they finish cooking they will be snapping, crackling and popping. This will continue for a few seconds. If you pop up more than you can eat, keep them in a zip lock bag for later. The microwave pellets should not be refrigerated and may be stored for 9 months at room temperature.
